Tim's Apple Cake Old-Vienna-style


Ingredients


  • 150g butter
  • 90g icing sugar
  • 1 egg
  • 90g flour
  • 100g cornflour  (or potato-flour if you can get it)
  • 1/2 tsp of baking powder
  • Filling:
  • 3-4 apples(peeled and cut into halves), 20g sugar, 20g flaked almonds


Preparation

- kneat all the ingredients together to a firm-ish dough and let it cool down in the fridge for 10-20mins
- put about two thirds into a baking form
- form a rim around the edge with your clean fingers
- put the apple halves on the dough, sprinkle with almonds and sugar
- take the remaining dough, flatten and cut out flat stripes, about 1 cm wide and arrange over the top in a grid-pattern
- bake at 180 degree Celcisus (maybe 35mins?) until golden brown
- it will change from white to brown and then burnt very quickly so check regulary.

Tim's Grandma Anne Lemon Cake

Ingredients

  • 300g butter or margarine
  • 300g sugar
  • 300g flour
  • 5 eggs
  • 1heaped tsp baking powder
  • 1 1/2 Lemon (juice and zest)
  • Icing sugar for icing
 
Preparation

- beat the eggs with the sugar until creamy.
- add the fat, then the flour with the baking powder, then the juice of one lemon
- grate the lemon zest with for instance a parmesan grater and add to the mix
- put in a baking dish and bake in the oven for 20mins at 175-200C until golden brown.
- let it cool for a bit.
- mix juice of 1/2 lemon with icing sugar to a semi-thick paste and put on the cake

Gabriella's Tiramisu




 Ingredients


  1.  one pack Bisconova savoiardi lady fingers (200g)
  2.  one Galbani Italian ricotta (250g)
  3.  one spoon of  Nescafé espresso delicate crema (100g)
  4.  one can of ambrosia custard light


 Preparation


  •  Mix the ricotta with the custard.
  •  Put the coffee and add hot water and a spoon of sugar.
  •  Dip the savoiardi in the the coffee but not too much, they will absorb
  •  the coffee quickly.
  •  Make a layer of savoiardi and a layer of custard and ricotta.
  •  Repeat until you finish the ingredients.
  •  Grate some chocolate on top.
